If you've got some time to kill, I came across this interview with one of my favorite current composers Jeff Russo. You can hear his work on Fargo (the tv show) Legion, and a ton of others projects. He has some interesting insight into composing, and juggle multiple projects at once. It's an hour so it's a bit long, but I really enjoyed it.
