There is a whole community developing shows like this. Studios in New York, Oklahoma and Georgia are putting out regular "TOS"-era episodes, and major feature film releases like "Axanar" and "Renegades" give you a grittier look of the Star Trek universe, using major celebrities, including former Trek cast members. I'm working with Star Trek Anthology, which is producing the pilot episode of "Starship Challenger," and has an "Assignment: Earth" and "Mother" series in the works.
