Need 5.1 for DCP - can stereo sound recording on set be mixed in post for 5.1?

The sound guy I want to work with has equipment to record on set in stereo - BUT - I need a 5.1 mix for the DCP? Post is not my wheelhouse. Any advice or help is appreciated!

Most of the time stereo is good enough to use for SFX, Foley, Ambient buzz tracks, etc and in post you can go from mono and artificially create 5.1 digitally. However it depends on what you are shooting and how much time you have in post. Dialog in my opinion is probably more important since its something you usually cant recreate afterwards unless you plan to ADR and re-record all the dialog in post. It is especially important to get dialog down clean and separated ie: each speaking person/actor on their own channel (not muxed into stereo if there are more than 2 persons) - this is also dependent on a few things, if you have lapel mics on each person or if you have multiple boom operators. On all my mix work I probably spend more time on cleaning dialog than anything else.

But to summaries if it was one person talking to camera (documentary type shoot) you would be fine with stereo SFX, stereo Ambience, stereo Foley (all managed and recorded separately) and finally a separate mono dialog channel.
