When an Interview Subject demands editing control of their interview, what do you do?

Hi. I am set to interview a doctor for a documentary a week from now, and just received this message:

"One more thing before we meet. I would like to have in writing that I will be able to see the product after you put it together but before release and be able to have parts changed if I believe that my words could be misinterpreted or my message misrepresented."

What would you do as a producer who doesn't want to have to re-edit a film based on the whims of one or more interview subjects?
