There's a YouTube channel dedicated to the performance of all of Joseph Haydn's symphonies, like this gem I hadn't heard before until I came across it recently: https://www.youtube.com/watch?v=agK9kgtqwNg
Haydn manages to be endlessly inventive while working within the constraints of the 18th Century Classical genre. Worth paying attention to are the modulations and where he goes with both thematic material and the harmonies--something I wish to hear more of in upcoming movie & TV projects.

I have been taught early on while I was learning orchestration was that Hayden is the father of the string quartet. Be that as it may whether agreed to or not, my favorite of his continues to be his trumpet concerto which is well know among the elite trumpet players (and it inspired my own trumpet concerto while I was learning to write for brass).
Speaking of melodies that stick in your head, try getting the melody of the 3rd movement out of your head once heard).
sample with John Williams conducting, solo'd by the great Wynton Marsalis
