I wouldn’t say “red flag”, but you’d have to ask why someone has 15 unproduced screenplays, unless that have several already produced. It may hint at a lack of quality. I would say it hints towards quantity over quality.

I would hope I can steer the conversation towards a topic or genre, rather than volume.

I've been asked that a few times and usually just concentrate on the best I feel I've got. You can take a bit longer pitching the things they are most likely interested in and just let them know "there are others if you want to know more."

Just one script to make Reps take an interest on new talent. After that it is a numbers game of ideas, Time, Talent, and right script at the right time for right buyer/employer.

I think it's always ok to say "yes, I have other projects" or similar, no need to give a number. Then you can feel less constrained about what is the perfect number.

When I go to a store and see an item I like and then check the price, I usually go to the salesperson with "what else have you got?"...It's a polite way to ditch something over, in this case (ridiculously) high price...same do the producers...it's simply not suitable for them, maybe not so good written or they're simply not after such genre...so it's not actually question of numbers, just have a greater script at hand...that way, as Dan M says, only one is enough...

I don't think having too many scripts is a red flag, Jessica Lea Hurt. That means the writer wrote a lot of scripts. I suggest writers only pitch scripts that are quality though.
